On le retrouve dans les \u00e9pices, les soupes en sachet, les fromages r\u00e2p\u00e9s et les pr\u00e9parations infantiles. Sa forme en nanoparticules soul\u00e8ve des questions sanitaires s\u00e9rieuses. L\u2019ANSES et l\u2019INRAE appellent \u00e0 la prudence sur ses effets \u00e0 long terme. Il <strong>associe<\/strong> un atome de silicium \u00e0 deux atomes d\u2019oxyg\u00e8ne. Sa masse molaire atteint <strong>60,084 g\/mol<\/strong>. Voil\u00e0 ce qui lui conf\u00e8re une stabilit\u00e9 remarquable.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ses propri\u00e9t\u00e9s physiques cl\u00e9s :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Point de fusion<\/strong> : 1 713 \u00b0C \u2014 r\u00e9sistance thermique exceptionnelle<\/li>\n\n\n\n<li><strong>Duret\u00e9<\/strong> : 7 sur l\u2019\u00e9chelle de Mohs<\/li>\n\n\n\n<li><strong>Solubilit\u00e9<\/strong> : insoluble dans l\u2019eau \u00e0 temp\u00e9rature ambiante<\/li>\n\n\n\n<li><strong>Inertie chimique<\/strong> : r\u00e9siste \u00e0 la majorit\u00e9 des acides, sauf l\u2019acide fluorhydrique<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Sous forme de poussi\u00e8res de roche ou de sable issu de l\u2019<a href=\"https:\/\/silicesantacruz.com\/es\/comment-extraire-le-silicium-du-sable\/\" data-type=\"link\" data-id=\"https:\/\/silicesantacruz.com\/comment-extraire-le-silicium-du-sable\/\">extraction de sable et du quartz<\/a>, le SiO2 se d\u00e9cline en versions cristalline et amorphe aux comportements distincts.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Le dioxyde de silicium est-il du sable ?<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Non, mais il en est d\u00e9riv\u00e9. Le <a href=\"https:\/\/silicesantacruz.com\/es\/sable-siliceux-granulometries-proprietes-et-usages-professionnels\/\" data-type=\"link\" data-id=\"https:\/\/silicesantacruz.com\/sable-siliceux-granulometries-proprietes-et-usages-professionnels\/\">sable siliceux<\/a> contient majoritairement du dioxyde de silicium, mais sous forme cristalline naturelle, diff\u00e9rente de celle utilis\u00e9e comme additif alimentaire.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Dioxyde de silicium E551 en alimentation : r\u00f4le et produits concern\u00e9s<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">L\u2019E551 remplit une mission pr\u00e9cise dans l\u2019industrie agroalimentaire : <strong>emp\u00eacher l\u2019agglom\u00e9ration des poudres<\/strong>. Sans lui, les m\u00e9langes d\u2019\u00e9pices, les soupes instantan\u00e9es ou les substituts de sel formeraient des grumeaux.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On le retrouve dans une liste surprenante de produits courants :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Aliments en poudre<\/strong> : soupes, caf\u00e9s solubles, c\u00e9r\u00e9ales infantiles<\/li>\n\n\n\n<li><strong>Fromage en tranches<\/strong> : pour \u00e9viter le collage<\/li>\n\n\n\n<li><strong>Chewing-gum<\/strong> : comme agent de texture<\/li>\n\n\n\n<li><strong>\u00c9pices et ar\u00f4mes<\/strong> : pour maintenir la fluidit\u00e9<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">La dose journali\u00e8re admissible n\u2019a pas \u00e9t\u00e9 formellement \u00e9tablie par l\u2019EFSA, faute de donn\u00e9es suffisantes sur les agr\u00e9gats de taille nanom\u00e9trique. Des chercheurs d\u2019INRAE ont par ailleurs \u00e9tabli un lien entre l\u2019exposition \u00e0 cet additif et une r\u00e9duction de la tol\u00e9rance aux prot\u00e9ines alimentaires, ouvrant la question d\u2019un lien avec la maladie c\u0153liaque.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Le dioxyde de silicium est-il dangereux ?<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Nanoparticules amorphes : risques et incertitudes<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Les nanoparticules de silice amorphe synth\u00e9tique mesurent entre 2 et 28 nm. \u00c0 cette \u00e9chelle, les <strong>particules inf\u00e9rieures \u00e0 100 nm<\/strong> se comportent diff\u00e9remment de la silice classique.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Or les \u00e9tudes men\u00e9es sur des mod\u00e8les animaux pointent des effets pr\u00e9occupants : stress oxydatif, dysfonctionnements de la division cellulaire et <strong>atteintes h\u00e9patiques<\/strong>. Des chercheurs ont aussi observ\u00e9 une perturbation du syst\u00e8me immunitaire intestinal chez des rongeurs expos\u00e9s \u00e0 doses humaines.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La vraie difficult\u00e9 pour l\u2019\u00eatre humain reste l\u2019incertitude dans l\u2019\u00e9valuation : on ne sait pas pr\u00e9cis\u00e9ment quelle proportion de ces agglom\u00e9rats conserve une taille nanom\u00e9trique apr\u00e8s ingestion. C\u2019est pr\u00e9cis\u00e9ment ce <strong>probl\u00e8me de s\u00e9curit\u00e9<\/strong> qui pousse l\u2019ANSES \u00e0 r\u00e9clamer un encadrement r\u00e9glementaire renforc\u00e9 pour tous les nanomat\u00e9riaux alimentaires.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ce que disent l\u2019EFSA et l\u2019ANSES en 2026<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">En octobre 2024, l\u2019EFSA a publi\u00e9 ses <a href=\"https:\/\/www.efsa.europa.eu\/fr\/plain-language-summary\/re-evaluation-silicon-dioxide-e-551-food-additive-foods-infants-below-16\" data-type=\"link\" data-id=\"https:\/\/www.efsa.europa.eu\/fr\/plain-language-summary\/re-evaluation-silicon-dioxide-e-551-food-additive-foods-infants-below-16\" target=\"_blank\" rel=\"noreferrer noopener\">conclusions d\u00e9finitives sur le E551<\/a>. Son verdict : <strong>aucun probl\u00e8me de s\u00e9curit\u00e9 identifi\u00e9<\/strong> pour tous les groupes de population, y compris les nourrissons de moins de 16 semaines, aux niveaux d\u2019utilisation d\u00e9clar\u00e9s.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">L\u2019agence europ\u00e9enne a toutefois renonc\u00e9 \u00e0 fixer une quantit\u00e9 maximale journali\u00e8re admissible. Les donn\u00e9es restent insuffisantes pour quantifier pr\u00e9cis\u00e9ment la fraction nanom\u00e9trique libre dans les aliments.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De son c\u00f4t\u00e9, l\u2019ANSES applique le <strong>principe de pr\u00e9caution<\/strong> depuis 2020. Elle reconna\u00eet que le E551 se pr\u00e9sente au moins partiellement sous forme nanom\u00e9trique dans certains produits transform\u00e9s. Plusieurs \u00e9tudes in vitro \u00e9voquent un effet de stress sur les cellules intestinales.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les deux agences s\u2019accordent sur un point : des donn\u00e9es industrielles compl\u00e9mentaires restent n\u00e9cessaires pour lever ces incertitudes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Conseils pratiques : lire les \u00e9tiquettes et limiter l\u2019exposition<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Sur une \u00e9tiquette, <strong>rep\u00e9rez le code E551 ou la mention \u00ab\u00a0dioxyde de silicium\u00a0\u00bb<\/strong> dans la liste des ingr\u00e9dients. C\u2019est l\u2019indication la plus fiable.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sachez que dans les spiritueux, aucune obligation l\u00e9gale n\u2019impose cet affichage. Le r\u00e8glement europ\u00e9en n\u00b0 1169\/2011 exige pourtant que les nanomat\u00e9riaux soient signal\u00e9s avec la mention \u00ab\u00a0[nano]\u00a0\u00bb \u2014 mais certains fabricants contournent cette r\u00e8gle d\u00e8s que l\u2019oxyde de silicium absorbe de l\u2019eau et gonfle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour r\u00e9duire concr\u00e8tement votre exposition, voici les r\u00e9flexes \u00e0 adopter :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Privil\u00e9giez les produits bruts<\/strong> plut\u00f4t que les pr\u00e9parations en poudre transform\u00e9es<\/li>\n\n\n\n<li><strong>V\u00e9rifiez syst\u00e9matiquement<\/strong> les fromages en tranches, \u00e9pices et chewing-gums<\/li>\n\n\n\n<li><strong>Contactez le fabricant<\/strong> si l\u2019\u00e9tiquette reste vague sur la forme utilis\u00e9e<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Une alimentation moins transform\u00e9e reste la strat\u00e9gie la plus directe pour limiter l\u2019ingestion d\u2019additifs antiagglom\u00e9rants au quotidien.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Le dioxyde de silicium, ou E551, est un additif antiagglom\u00e9rant extrait du sable de quartz.
